Snow Day = Chili

I woke up from Snow Day #2 to find out that our heat quit working during the middle of the night.  My solution was to wear as many warm clothes as I could (yes, that included my grandmother’s mink shawl) and make chili until the repair guy could get to our house to fix the problem.

My favorite chili recipe is White Bean and Chicken Chili from Giada De Laurentiis.  It uses ground chicken and swiss chard and it is absoluetly yummy!  I have made the original recipe several times but lately when I make it I omit the corn and use organic kale instead of swiss chard.

It may seem like a ton of ingredients but it does come together quickly.  Once you brown the chicken and add the seasonings, it will need to simmer for awhile.

Once it was done, I had a bowl while sitting by the fire trying to stay warm.  That is until Gypsy decided to take over!
